Recipe: Black Bean Soup

1 Tbsp cooking oil
1 medium onion, chopped
2 cloves garlic, minced
3 15-oz. cans black beans, drained (or use pre-cooked dry beans)
1 tsp ground cumin
1 Tbsp chili powder
2 cups broth (vegetable or chicken broth, homemade stock, or water) 1 tsp lime juice

OPTIONAL:
chopped fresh cilantro to taste
1 cup corn
1 15-oz can diced tomatoes with juice
1 4-oz can green chiles, chopped

Heat oil and sauté onion and garlic 3-4 minutes. Add remaining ingredients and simmer 20 minutes. For a smoother soup, puree in batches in blender.
