Recipe: Greek-style Fried Zucchini with Tzatziki Sauce

1 zucchini, sliced into thin (about 1/8-inch) slices
1 egg, beaten
1/2 cup Italian breadcrumbs
olive oil

Generously coat a skillet with olive oil. (No need to deep fry, more of a "shallow fry".) Dip zucchini slices in egg then in breadcrumbs to coat. Fry 2–3 minutes each side.

 

Tzatziki Sauce

1 1/2 cups plain yogurt (Greek style if possible)
3 cloves garlic, minced
1 small cucumber, peeled, seeded, and chopped
1 tablespoon chopped fresh dill
1 tablespoon red wine vinegar
salt and pepper to taste

Mix all ingredients by hand or in food processor.

 

Alternate quick and easy yogurt dipping sauce:

1 cup plain yogurt, 1 teaspoon dill, 1/2 teaspoon garlic powder, squeeze of lemon juice. Whisk all ingredients together.
