Recipe: Mediterranean Grilled Veggies

Cut into chunks: zucchini, yellow squash, red onion, bell pepper (any color).

Thread onto skewers, along with whole baby bella mushooms and fresh cherry tomatoes. Optional: additional skewers of shrimp or chicken. Lay skewers on a tray and drizzle with garlicky marinade, let sit for at least 20 minutes.

 

Garlicky Marinade

1/4 cup olive oil
1 tablespoon red wine vinegar
2–3 cloves garlic, minced
1 teaspoon dried Italian seasoning

Whisk all ingredients together. Place skewers on hot grill, turning occasionally and brushing with additional marinade until done. Serve with warmed pita bread and hummus.
