Recipe: Simple Summer Skillet

1 large zucchini, chopped
1/2 large red onion, chopped
1 large tomato, chopped
Parmesan or feta cheese
Optional additions: chopped yellow squash, minced garlic

Chop and sauté squash and onion for about 5 minutes. Turn off heat and add fresh tomato chunks. Sprinkle with feta or paremesan cheese if desired, and cover with a lid for 2 minutes. Serve as is, or over pasta or rice.
