Recipe: Simple Healthy Bean and Corn Tacos
1 can beans (red, black or pinto)
1 cup corn, canned or frozen (thawed)
1 large fresh tomato, chopped
1 avocado, peeled and diced
juice of 1/2 lime
1 tablespoon fresh cilantro, minced
salsa of your choice
corn tortillas, warmed
Mix all and scoop into warmed tortillas. Serves 2-3.
