Most of us jump in the car for a road trip without giving much thought to what we will eat on the way. Our fast food culture is so ingrained that we don’t even consider it to be important. Yet preparation is key to maintaining a healthy diet. Covered wagons carried months of supplies, and even our parents or grandparents brought their picnic baskets and camp stoves. Let’s bring back the roadside picnic, with a new gourmet healthy twist.
Recipe: Easy Tropical Picnic for 2–4
Equipment needed: Large tray or pizza pan, can opener, small bowl, plates and forks
Groceries to bring or buy:
Large can of pineapple chunks
Large can or jar of Mandarin oranges
Jar of frozen mango chunks
1 can refried black beans
1 bag of sweet-potato chips
1-2 lbs. pre-cooked shrimp
Arrange ingredients on platter. Place black beans in bowl to use as dip for the sweet-potato chips. Optional: bottled teriyaki sauce as dip, substitute chicken or mixed nuts for shrimp.
